At 28 years of age I was diagnosed with pernicious anemia which eventually lead to the autoimmune disease multiple sclerosis. Doctors did not give me much hope. Although if I would have listened to them, more than likely I would be sitting in a wheelchair right now. Instead, I decided to make food my medicine and I began researching how to support my immune system with nutrient-dense foods. That’s when I discovered the amazing nutritional benefits of blackstrap molasses for treating anemia. With further research I discovered how the antioxidants in cocoa have the ability to carry nutrition from food into cells. Suddenly an idea was born, what if I combined cocoa with blackstrap molasses. That would enable the antioxidants from the cocoa to carry the nutrition from the blackstrap molasses into the cells. What I ended up creating was a healthy nutrient-dense dark chocolate syrup that could treat my anemia, multiple sclerosis and my need for a sweet treat!  

Feeling deprived of indulgent treats is one of the biggest challenges when trying to live a life focused on eating only nutrient-dense foods. It’s hard to get excited over kale chips when what you really want is potato chips. Typically, sweet treats are the first “no-no” on the list that have to go when changing your lifestyle. By creating a delicious and nutritious sweet treat, I could enjoy what I truly loved and wanted. This was an incredible breakthrough for me because now I did not have to live life feeling deprived.
